The poke bowl is a popular Hawaiian bowl dish that can be easily customized by changing ingredients. Here's a delicious poke bowl recipe for two, with tofu and shiitake mushrooms.
Ingredients
2 dl of farro
4 dl of water
Salt
1 pack of Emperor shiitake mushrooms (150 g)
Salt
Half a cucumber
Radish
1 avocado
4 spring onion stalks
1 pack of Tofu
For Garnish:
sesame seeds
Marinade:
1 dl of soy sauce
2 tbsp of rice vinegar
2 tsp of miso paste
2 tsp of sesame oil
2 cloves of garlic
Directions
Boil farro in salted water for 13 minutes. Drain and let it cool.
Combine the marinade ingredients together.
Slice the tofu and pan-fry on both sides.
Place tofu slices in a dish and pour the marinade over them. Let it marinate for at least 10 minutes.
Pan-fry the shiitake mushrooms and lightly season with salt.
Slice the cucumbers and dice the radishes.
Halve the avocado, remove the pit, scoop out the flesh with a spoon, and slice it.
Finely chop the spring onions.
Assemble the dish by placing farro at the bottom of the serving bowl and pouring the tofu marinade over it.
Arrange the rest of the ingredients on top of the farro. Garnish with sesame seeds.
